Kaum
Kaum means clan, or tribe.
Part of the Potato Head Family, Kaum is a restaurant built around Indonesia's culinary diversity — a landscape spanning over 600 ethnic groups, each with its own traditions, ingredients, and way of eating.
For years, the Kaum team has traveled across the archipelago into the lesser-known regions of Indonesia, learning directly from the communities that hold this knowledge and working closely with small-scale, responsible producers wherever possible. That research is what the menu is built on: dishes from Aceh, Sulawesi, Maluku, Bali, Java, and beyond, prepared through bamboo grilling, fermentation, pit roasting, manual grinding, and skewer grilling.
The drinks list follows the same instinct: cocktails built around fruit and spice-infused local spirits, including a dedicated line rested for 21 days in handmade ceramic claypots.
Kaum opened in Hong Kong in 2016, earning a place in the Michelin Guide Hong Kong & Macau 2017. Bali followed, then Jakarta.
Today Kaum operates in two locations: Menteng, Jakarta, and within Desa Potato Head, Seminyak, Bali.
